I remember as a kid loving the taste of eggnog. Until that year when I was about 11, I got into my uncle’s eggnog “adult” batch after Thanksgiving dinner and got so drunk and so sick, I had to spend the night at my cousin’s house in Long Island. Yea, I’ve never had spiked eggnog since.
But I’ve always rather loved the creamy, warm and spicy flavor of this drink. Of course it isn’t very vegan friendly what with all that milk, cream and eggs and all. So, I gave it up many years ago.
Until last year, when I accidentally discovered a smoothie recipe that tasted just like the non-alcoholic wonderful eggnogs of my youth.
Green Diva Meg’s non-alcoholic vegan eggnog recipe
(this is a single serving, so multiply as needed)
1 cup nut milk (I used my own cashew milk – see my recipe here)
1 ripe banana
2 tablespoons almond butter
1 inch peeled fresh ginger
1 – 2 tablespoons maple syrup
1/2 – 1 teaspoon organic vanilla powder (or 1/4 teaspoon vanilla extract)
1/8 – 1/4 teaspoon turmeric powder (or 1/2 inch peeled fresh turmeric root)
dash each (to taste really) ground cloves, cinnamon, nutmeg
